Most foreigners think Sichuan food is just spicy, but the true magic is actually the “麻” (má) — the tingling, buzzing feeling from Sichuan peppercorns.

“Mapo” literally means “pockmarked granny.”

郫县豆瓣酱 is a fermented chilli bean paste made from broad beans, soybeans, chilli peppers, salt, and wheat flour.
It gives Sichuan dishes their deep red color and rich salty-spicy flavor.

2. 宫保鸡丁 (gōngbǎo jīdīng) — Kung Pao Chicken
Possibly the most globally famous Chinese dish.

Sweet, sour, mildly spicy — with the perfect mix of soft chicken and crunchy peanuts.
